dc.description.abstract The food truck service is growing due to the change in customers' fast food consumption habits. This research aims to test the logic of using urban logistics to improve the optimization of food truck supply. This research proposes a case study where route optimization methods, central location, and the estimation of the environmental impact through the emission of pollutant gases at the time of supplying food trucks are proposed; RStudio and COPERT V software was used to obtain quantitative results. Concerning the results, it was found that the food truck is viable due to the number of potential customers within the case study area. The central location (longitude, latitude) of the food truck within the area where its customers are located was found; in addition, thanks to the optimal supply route, it was possible to calculate the emissions of polluting gases: CO2, PM2.5, PM10, NOX, VOC eng
